Apples are available year-round, but they are best in the autumn when they’re just harvested. They’re also best for baking at this time of year, which is why bakers think about apples as soon as the weather starts cooling off.

Butterscotch Apple Crisp
½ cup sugar
¼ cup flour
¼ teaspoon cinnamon
5 cups thinly sliced and pared apples
1 (6-ounce) package butterscotch morsels
¼ cup soft margarine
¾ cup sifted flour
1/8 teaspoon salt
Sift sugar, ¼ cup flour and cinnamon together. Add apples and stir until apples are well coated. Turn into a well-greased 8-inch square pan. Bake at 375 degrees for 15 minutes.
Melt morsels and stir in margarine. Blend in salt and ¾ cup sifted flour until mixture resembles coarse crumbs. Remove pan from oven and sprinkle butterscotch mixture over hot apples. Continue baking another 30 minutes.
Serve warm or at room temperature with whipped cream. Makes 8 servings.
Apple Dump Cake
4 apples, thinly sliced (peeled or unpeeled)
1 ½ teaspoons cinnamon
½ cup brown sugar, packed
1 box yellow cake mix, sifted
1 stick margarine
In 13-by-9-inch pan, sprinkle apples with cinnamon and brown sugar. Pour the sifted cake mix on top of apples. Cut the margarine very thin and then place on top of the cake mix.
Bake 45 minutes in 350-degree oven. Serve warm or cold. Makes 8 to 10 servings.
